It is a very cruel world in that we must do things other than making and eating comforting soup. I feel better about the world when making and subsequently eating comforting soups. But this pleasure is often denied me.

Here is the recipe for the comforting soup that I made yesterday:

3 cups peeled, cubed, seeded butternut squash
1 1/2 cups peeled cubed potatoes
2 small onions, minced
1 1/4 quarts chicken broth
1 tsp paprika
1 1/2 tablespoons fresh chopped chives
2 tbs butter
salt
pepper
1 cup whipping/heavy cream (optional)


melt the butter in a large pot. Cook the onions in the melted butter about 5 minutes. Then toss in the squash, potatoes, broth, and paprika. Bring to a boil, cover, reduce heat to low and then cook for 35 minutes. In batches, blend the soup in a blender or food processor until smooth. Put back into the pot, add the chives and cream. Season to taste with salt and pepper.

Now you are done. Your soup is lightly orange and it tastes like potatoes. Potatoes taste like warmth.
